Weekend Herb Blogging #414 - Recap

You'll find the English recap first followed by the Italian - please excuse any errors as I've only recently returned to Melbourne and am still quite jetlagged.


Beetroot and Potato Soup - Zuppa di Rape Rosse e Patate

A festive start with its rich red colouring - this soup contains beetroot, potatoes, carrots, onions, tomatoes and red cabbage. Served with a dollop of sour cream it would make a perfect start to your Christmas meal.

Just like Terry, I too love cavolo nero so this recipe has got my attention. It's an oven baked frittata packed full of cavolo nero and champignon mushrooms and spiced with a little nutmeg. This would make an excellent after christmas dish - when you want something tasty but simple to prepare.

If you are like me, you are probably asking "what is preboggion?" According to Carla Emilia it is a mix of wild greens that can contain chard, borage, sow-thistle, chicory, dandelion, nettle, poppy, wild chicory, rapunzel, sanguisorba and dandelion.

Simona treats us with two versions of this tasty casserole - one made with lightly roasted cauliflower florets and spiced with saffron, cumin, caraway, coriander and cinnamon and the other made with a mix of steamed vegetables and moroccan seasoning.


Pistachio Date Muffins

Spiced with cardamom and ginger and studded with dates, these muffins would be perfect for christmas breakfast. The batter also contains ground pistachio and oatmeal and grated carrots keep it moist and chewy. Delicious!

Elisir of Arancia - Orange Elixir

If you are looking for something different to make for Christmas, then this Orange Elixir is for you. The orange is studded with cloves and is placed in a jar, along with fresh ginger root and juniper berries. It is then covered in a mix of alcohol and sugar syrup and left to stand for 3 months.


Yogurt alla melissa e menta - Lemon Balm and Mint Yogurt

Graziana makes her own yoghurt and this one is flavoured with dried lemon balm and mint.

Come Terry, amo cavolo nero quindi questa ricetta ha la mia attenzione. E un frittata al forno ricche di cavolo nero e funghi champignon e speziata con un po 'di noce moscata. Questo sarebbe un ottimo piatto per i giorni dopo Natale - quando volete qualcosa gustoso, ma semplice da preparare.

Se siete come me, vi starete chiedendo "che cosa è preboggion?" Secondo Carla Emilia è un mix di erbe selvatiche che possono contenere bietole di prato, borragine, cicerbita, cicoria, dente di leone, ortica, papavero, radicchio selvatica, Raperonzolo, Sanguisorba e tarassaco.

Simona ha datto due versioni di questo gustoso casseruola - uno con cimette di cavolfiore leggermente tostate e speziate con zafferano, cumino, cumino tedesco, coriandolo e cannella e l'altro fatto con un mix di verdure cotte al vapore e le spezie marocchino.

Speziato con cardamomo e zenzero e datteri, queste muffins sarebbe perfetto per la prima colazione di Natale. La pastella contiene anche farina di pistacchio e d'avena. Delizioso!

Se stai cercando per qualcosa da fare per Natale, questo Elisir di Arancia è per voi. L'arancia è costellata di chiodi di garofano ed è posizionato in un vaso, insieme con radice di zenzero fresco e bacche di ginepro - coprire con un mix di sciroppo di zucchero e alcool.
